2 pounds of of thin chicken cutlets
2 eggs
1 teaspoon of sea salt
1/4 teaspoon of black pepper
1 teaspoon of paprika
1 teaspoon of cumin
1 tablespoons of Dijon mustard
1 tablespoon of honey
Juice from 1/2 lemon
2 minced garlic cloves
2 tablespoons of olive oil
For the breadcrumbs mix-
1/2 cup of panko bread crumbs
1 cup of breadcrumbs
1/4 cup of sesame seeds.
For the baking pan-
6 tablespoons of olive oil
Olive oil spray
Directions
Preheat the oven to 420F / 220C
In a bowl, put the eggs and all the spices and whisk it well.
Add the chicken cutlets and mix it all.
Coat each chicken cutlet with the breadcrumbs mix from both sides.
On a baking pan with parchment paper, drizzle 3 tablespoons of olive oil.
Place the chicken cutlets in one layer.
Drizzle 3 tablespoons on top of the schnitzels.
Bake it in the oven on 420F for 15 minutes, flip them to the other side, and bake for 10 more minutes.
Spray olive oil and transfer to a convection broil on 450F for 7-8 minutes to get a nice golden color.
Serve it on a nice plate with some flaky maldon salt on top.
