Ingredients

Yields: About 12 fritters

Ingredients:

– 3 cups oil for frying

– 1/2 cup sifted gluten-free flour

– 2/3 cup fine cornmeal

– 2 teaspoons baking powder

– 1/2 teaspoon salt

– 1/2 to 3/4 cup granulated sugar (to taste)

– 1 egg, lightly beaten

– 1/2 cup coconut milk or regular milk

– 1 tablespoon melted shortening or butter

– 1 (12 oz) can whole kernel corn, drained

Directions

1. Heat oil in a heavy pot or deep fryer to 365°F.

2. In a medium bowl, whisk together gluten-free flour, cornmeal, baking powder, salt, and sugar.

3. In another bowl, combine egg, milk, and melted shortening or butter. Stir wet ingredients into the dry mixture.

4. Fold in the corn kernels.

5. Carefully drop batter by spoonfuls into hot oil. Fry for about 2 minutes or until golden brown, turning as needed.

6. Remove and drain on paper towels.

7. Serve warm, optionally with ranch dipping sauce.
