Crispy Gnocchi Burrata and Tomato Salad

Ingredients

1 pack gnocchi

1 tsp paprika

1 tsp garlic powder

½ tsp chilli powder (adjust to taste)

200g cherry tomatoes, halved

1 sliced shallot

1 ball burrata (can sub for mozzarella)

A handful of sliced fresh basil

Optional balsamic glaze to finish

Directions

If roasting tomatoes (skip this step if you’d rather just use raw tomatoes) toss with olive oil, a few sliced garlic cloves, salt, pepper & optional chilli flakes. Roast for 20 mins or so until blistered & jammy. Allow to cool.

Toss gnocchi (straight from the pack! do not boil) with olive oil, paprika, garlic powder, chilli, salt & pepper. Air fry at 200°C for 10 or 15 minutes shaking halfway, until golden and crisp. Let cool. If using a normal oven - roast for around 20-25 mins.

In a large bowl combine gnocchi, tomatoes, burrata, shallots & basil. Season with a little extra salt & pepper. If you fancy an extra zing add a drizzle of balsamic glaze x
