50g Greek yogurt
1 tsp cinnamon
100ml almond milk
25g protein powder
1/4 tsp baking powder
1 egg
For the paste:
1 tbsp brown sugar (or monkfruit sweetener)
1 tsp cinnamon
1 tsp pancake batter
5g salted butter
For the glazing (optional, not included in macros):
10g icing sugar
5g lite cream cheese
5ml almond milk
Directions
Preheat the Oven: Preheat your oven to 180°C (350°F).
Prepare the Pancake Batter: In a bowl, combine all the pancake ingredients and mix until smooth, ensuring there are no lumps.
Make the Cinnamon Paste: In a small bowl, combine the brown sugar, cinnamon, pancake batter, and butter. Stir until the paste forms.
Swirl the Paste into the Batter: Using a piping bag or ziplock bag, pour in the batter and snip a hole in the corner. Create a swirl pattern in the batter to replicate a cinnamon scroll.
Cook the Pancakes: Place the pancakes in the oven and bake at 180°C (350°F) for 20-25 minutes, or until cooked through and golden on top.
Glaze (optional): Mix together the icing sugar, cream cheese, and almond milk for the glaze. Drizzle over your pancakes for an extra touch!
