Chicken Sauce

6 Tbsp. butter

¾ cup shallot

1½ tsp. pepper

¾ tsp. nutmeg

1 cup cider vinegar

1 cup maple syrup

1. Saute shallots in butter and reduce by ½ .

Chicken Topping

2¼ cup slivered almonds

9 Tbsp. butter

1½ cup dried cranberries

3 Tbsp. bread crumbs

Salt & pepper

1. Cook almonds and butter until brown.

2. Add cranberries and pan roast 1 minute.
