Ingredients

2 tbsp butter

1/2 medium yellow onion, diced

1-2 garlic cloves

2 tbsp all-purpose flour

2 cups milk

1 cup chicken or vegetable broth

2-3 cups chopped broccoli

1 large carrot, shredded

1 cup shredded cheddar cheese

Salt, pepper, and turmeric to taste

Directions

1- Melt butter, sauté onions, then garlic.Whisk in flour until golden.

2- Slowly stir in milk, then broth, and cook until thickened.

3- Season with salt, pepper, and turmeric.

4- Add broccoli and carrots, cooking until fork-tender.

5- Gradually stir in cheese until melted and creamy. Adjust seasoning to taste.
