High Fiber Miso Dense Bean Salad

For the Salad
1 15oz bag of edamame
1 15oz can of white beans
2 cups of chopped green cabbage
2 cups of chopped purple cabbage
2 cups of kale
1 bunch of chopped green onions
2 cups of chopped rotisserie chicken (optional)
1/4 cup sesame seeds
1 bunch (1 cup) chopped cilantro
For the Dressing
2/3 cup avocado oil (160ml)
½ cup rice wine vinegar (80ml)
1 tbs grated ginger (15ml)
1 clove of grated garlic (7ml)
Juice of 1 lime (30ml)
1 tsp sea salt
2 tbs miso paste (light or dark) (30ml)
Directions
Rinse and drain the white beans. Thaw the edamame if needed. Add both to a large bowl.
Chop the green and purple cabbage and add them to the bowl.
Use a mandolin to slice the brussels thinly and add them.
Peel and shred the carrots and add them to the bowl.
Chop the green onions and add them to the bowl.
Break down and dice the rotisserie chicken and add it to the bowl.
Chop the cilantro and add it to the bowl with the sesame seeds.
In a small container use a milk frother or immersion blender to mix the avocado oil, rice wine vinegar, ginger, garlic lime juice, sea salt, and miso paste.
Blend until smooth and creamy and pour over the salad.
Toss well and enjoy!
