Unique Pasta Salad

1 pound small pasta
1 bunch chopped asparagus
2 cups frozen peas
1/4 cup diced or sliced red onion
1/2 cup chopped celery
1/2 cup halved green olives
1/2 cup pistachios
1/2 cup chopped parsley
1/4 cup chopped dill
3/4 cup dairy-free feta cheese
Dressing:
1/4 cup olive oil + 1 tablespoon
1/4 cup red wine vinegar
Juice of one lemon
2 teaspoons Dijon mustard
2 teaspoons oregano
1 teaspoon pink salt
Directions
Cook the pasta.
Bring a pot of water to a boil. Drop in the asparagus and peas for 1-2 minutes. Drain and rinse in cold water.
Toss everything together!
if you make this ahead, best to add the dressing right before serving. For leftovers add a little more olive oil, vinegar and lemon juice as the pasta tends to soak up the dressing.
