Ingredients

Tangerine Mousse

6 tangerines, zested

3 T water

1/2 c sugar

4 oz butter

1/4 tsp salt

Warm these to dissolve. Should yield 1/2 c juice (or maybe add 1/2c tangerine juice?)

3 eggs

3 yolks

Beat eggs and temper with warm liquid. Cook 4 mins.

Whip 1 c cream.

Strain, cool, and fold into cream.
