Spinach-Herb Polenta

Kosher salt

1 c. instant polenta

2 c. baby spinach

4 tbsp. Cheesy Herb Butter

1/4 c. basil leaves, chopped

2 tbsp. grated Parmesan cheese, plus more for serving

Directions

In medium saucepan, combine 4 cups water with 1/2 teaspoon salt; bring to a boil. Add polenta and cook on low, whisking constantly, until thickened, 3 to 5 minutes. Stir in spinach and cook until wilted, 1 minute. Add butter, basil, and Parmesan; cook, stirring, 1 minute. Serve sprinkled with additional Parmesan.
