Antipasto Pasta Salad

Ingredients

3 med zucchini, julienned

1 pound short curly pasta, cooked al dente

one TJ's packet of sundried tomatoes, chopped & (3 oz), soaked in warm water and drained

2 cups artichoke hearts, chopped

1 cup mama lil's peppers, chopped

1 cup kalamata olives, chopped

1/2 cup or more pesto

Directions

Combine all ingredients. Refrigerate for 2 hours. Serve cold.

Notes

You may omit pasta and double the zucchini.
