CREAMY LEMON-GARLIC CHICKEN & GNOCCHI
16 oz chicken breasts, cut in half lengthwise to make cutlets • 3/4tsp garlic powder • 1 tsp lemon pepper seasoning 2 tbsp olive oil or butter • 3 cloves garlic, minced • ½ cup chicken or vegetable broth •
1 tbsp lemon juice • 1 cup heavy cream or plant-based cream • 1 lb. potato gnocchi • 1/3 cup parmesan cheese, grated • 3 cups fresh spinach •
Directions
season each of side of the thin chicken cutlets with garlic powder and lemon pepper
add oil and butter to skillet over medium-high heat; add garlic and saute 2-3 mins. place chicken in the pan and sear 5 min per side, until golden and cooked through. transfer to a plate.
stir in broth and lemon juice.
add cream and gnocchi. Stir and make sure the gnocchi is covered in sauce. let it simmer uncovered, for 5-7 minutes, stirring occasionally until sauce is thickened.
remove pan from heat and add parmesan and spinach. toss until spinach is wilted. place chicken cutlets back into skillet
