High Fiber Brussels Sprout Salad

Ingredients

1 lb brussels sprouts, trimmed and thinly sliced

1 medium apple, cored and thinly sliced

1/3 cup freshly chopped chives, from 1 (0.5-oz) package

1/2 cup crumbled feta cheese

1/2 cup chopped pecans

1/3 cup extra-virgin olive oil

2 Tbsp apple cider vinegar

2 Tbsp lemon juice, from about 1/2 large lemon

2 Tbsp hot honey (or regular honey works too!)

1 1/2 Tbsp dijon mustard

Kosher salt and black pepper

Directions

In a large bowl, combine the brussels sprouts, apple, chives, feta, and pecans.

In a medium jar, shake together the olive oil, apple cider vinegar, lemon juice, hot honey, Dijon mustard, and generous pinches of salt and pepper. Adjust to taste.

Pour the dressing over the salad and toss to combine. This salad gets even better after some time in the fridge—store in an airtight container for up to 4 days.
