8oz of elbow pasta
1/2 an avocado
20 cherry tomatoes
1/2 a red onion
1 ½ cups whole kernel corn
Fresh parsley & cilantro
Juice of 1 lemon
Dressing: 1 tbsp olive oil, 3 tbsp red wine vinegar, 1 tbsp minced garlic , salt & pepper to taste
