Lentil Greek Salad – Flavorful, Nutritious & Meal-prep Frien

Ingredients

1 can lentils (1.5 cups), rinsed & drained

4 baby cucumbers, finely chopped

1 pint cherry tomatoes, chopped

1 green pepper, chopped

½ cup kalamata olives

½ cup roasted red peppers, chopped

½ cup red onion, chopped

¼ cup parsley or dill, chopped (optional)

½ cup feta, crumbled

Dressing

¼ cup olive oil

2 tbsp red wine vinegar

1 tbsp balsamic vinegar

1 tsp honey or maple syrup

2 tsp dijon mustard

1-2 tsp dried oregano

Salt & pepper, to taste

Directions

Combine all salad ingredients in a bowl.

In a separate bowl, whisk together the dressing.

Pour over the salad, mix well & refrigerate for at least 30 mins to enhance the flavors.

Serve alone or over lettuce, and add protein if desired!
