Pickled Red Onions

Ingredients

1/2-1 medium red onion

1 cup white wine vinegar or apple cider vinegar

1 tsp kosher salt

1/2 tsp sugar

Directions

Slice onions and place in a clean pint jar.

Heat the vinegar, sugar, and salt in a medium saucepan over medium heat. Stir until the sugar and salt dissolve, about 1 minute. Let cool and pour over the sliced onions. Set aside to cool to room temperature, then store the onions in the fridge.

Notes

I tried these amounts and there was leftover liquid. 9/10/23 tried the original recipe and there wasn’t enough liquid.
