Pickled Onions

Ingredients

2 medium red onions

1 cup white vinegar

2 cups hot water

2 tb maple syrup

2 tsp salt

1 tb peppercorns (optional)

Peel your onions and slice them very thin. I like using a mandolin to make sure they are even thickness. Place the onions into a clean jar of choice. Pour over the vinegar and warm water, then add maple syrup, salt and peppercorns (if using). Cover the jar tightly and very gently shake or turn upside down a few times so all the ingredients are all mixed together evenly. Place the jar in the fridge to set for at least 30 minutes and then enjoy! For best results and to get that deep purple color, wait a few hours or overnight and enjoy! #pickledonions #marinatedonions
