4 Garlic cloves
3 Roma tomatoes
1 red Jalapeño
1 green Jalapeño
1 Guajillo pepper
A thick slice of Onion
Rinse all ingredients well.
Place ingredients on a grill or hot pan, turning frequently for 7-10 minutes until charred and softened.
Remove ingredients from pan and allow to cool.
Remove stems, seeds and skins from the peppers and the skin from the tomatoes. Leave a few seeds to make the salsa hotter.
Place all ingredients into a blender and blend to desired consistency.
Add salt, lime juice, and chopped cilantro as desired.
I've seen some versions where you don't remove the charred parts of the tomatoes and peppers. Don't do it if things are VERY charred.
