French Onion Chuck Roast

Ingredients

one chuck roast (3-5 lbs, cut into pieces so it can fit into your Dutch oven)

four to five sweet onions

three cloves of garlic

sea salt to taste

two cups beef bone broth

one cup dry white wine (or sub more bone broth but all the alcohol is cooked off fyi)

four sprigs of thyme

Directions

preheat oven to 325°F

start by generously salting chuck roast on all sides

heat a Dutch oven over medium heat and add butter and onions. sautee until they’re carmelized (about thirty minutes, stirring every five or so minutes)

remove the carmelized onions from the pot and sear off chicken roast — about five minutes per side

deglaze the pan with wine and bone broth

add onions back, add more salt, thyme, and pepper

add the lid and braise in the oven for 3-4 hours or until the meat is falling apart

serve with mashed potatoes or baguette and top with Gruyère cheese and more fresh pepper
