3-Ingredient Banana Pancakes

Ingredients

2 bananas

3 eggs

60g oats

TOPPINGS:

Banana

Peanut butter

Toasted Flaked Almonds

Directions

Crack the eggs into a blender then add the bananas and oats. Turn the blender onto a medium speed and blitz for 1-2 mins until the mixture is homogeneous and semi-smooth. Let it sit for 3 mins.

Warm a non-stick frying pan over a medium heat. Once hot, turn the heat down to low and add a small knob of butter. Once melted, add 4 tbsp of the mixture (for one large pancake).

Cook over a low heat for 1-2 mins until bubbles begin to appear. Flip and cook for another minute on the other side. Remove to a plate and cover with kitchen foil (or pop in the bottom shelf of a warm oven) to keep warm until serving. Repeat for the remaining mixture.

Serve with your choice of toppings! More banana slices, peanut butter and flaked toasted almonds are great.
