1 lb Brussels sprouts, trimmed and halved

1 small butternut squash, peeled and cubed

4 strips bacon, cooked and crumbled

1/2 cup walnuts, roughly chopped

4 oz feta cheese, crumbled

8 oz burrata cheese (or fresh mozzarella), torn into pieces

Salt and pepper, to taste

Fresh thyme or parsley, for garnish (optional)

For the Maple Glaze:

3 tablespoons olive oil

3 tablespoons pure maple syrup

1 tablespoon balsamic vinegar

1 teaspoon Dijon mustard

Salt and pepper, to taste

Directions

Step 1: Roast the Vegetables

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

In a large bowl, toss the Brussels sprouts and butternut squash with olive oil, maple syrup, balsamic vinegar, Dijon mustard, salt, and pepper until evenly coated.
