1 lb (450 g) top sirloin (or ribeye / NY strip) (cut into 1-inch cubes)
1 tbsp avocado oil (or olive oil)
1 tsp kosher salt (adjust to taste)
1/2 tsp black pepper
1/2 tsp garlic powder (optional)
3 tbsp unsalted butter
3 cloves garlic (minced)
1 tbsp parsley (chopped (optional)
pinch red pepper flakes (optional)
1 tsp lemon juice (optional)
Directions
Prep: Pat steak cubes dry. Toss with oil, salt, pepper (and garlic powder if using).
Preheat: Preheat air fryer to 400°F for 3 minutes.
Cook: Air fry steak bites in a single layer for 6-9 minutes, shaking halfway, until browned and cooked to your liking.
Garlic butter: Melt butter and warm garlic gently 30-60 seconds until fragrant (don’t brown).
Finish: Toss hot steak bites with garlic butter. Rest 1-2 minutes, then serve.
Notes
Don’t overcrowd cook in batches for best browning.
Cut size matters: 1-inch cubes cook fastest and most evenly.
Doneness tip: Pull early and rest carryover heat finishes cooking.
Avoid adding butter before cooking (can smoke; garlic can burn).
