Cajun steak Salad

Ingredients

2 ciabatta/sourdough bread

2 cloves garlic

1 head baby lettuce

1 pack grape tomatoes

4oz Carrots (or mini bag of shredded carrots)

1/3 cup shredded cheddar cheese

1 shallot

Dressing of choice

4-6tbsp sour cream

10oz ranch steak

2-3tbsp blackening spice

crispy fried onions

Directions

Step 1

Wash and dry produce. Dice ciabatta into ½-inch pieces. Peel and finely chop garlic. Trim and discard root end from lettuce; chop leaves into bite-size pieces. Halve tomatoes. Finely chop Shallot. Shred carrots (if you bought shredded carrots, skip this step).

Step 2

In a small bowl, combine dressing and sour cream (if you like lots of dressing, add 1 TBSP mayonnaise from your pantry; 2 TBSP for 4 servings).

Step 3

Melt 3 TBSP butter (6 TBSP for 4 servings) in a large pan over medium heat. Add ciabatta and cook, stirring frequently, until golden brown and toasted, 3-5 minutes (reduce heat if croutons begin browning too quickly). Add garlic and another 1 TBSP butter (2 TBSP for 4); cook, stirring, until fragrant, 30-60 seconds more. Season generously with salt. Transfer croutons to a plate.

Step 4

Add a drizzle of oil to same pan; increase heat to medium high. Pat steak dry with paper towels; season all over with half the Blackening Spice (all for 4 servings), salt, and pepper. Add steak to pan; cook until blackened and cooked to desired done-ness, 3-5 minutes per side. (If steak begins blackening too quickly, reduce that heat!) Transfer to a cutting board.

Step 5

In a large bowl, toss lettuce, tomatoes, carrots and shallots. Thinly slice steak against the grain.

Step 6

Divide salad between bowls; top with sliced steak and drizzle with remaining dressing. Top with crispy fried onions and as many croutons as you like.

Steak is fully cooked when internal temperature reaches 145°.
