4 Large boneless, skinless chicken thighs
3 Tbsp Honey
1 ½ Tbsp Brown Sugar
1 Tbsp Red Miso Paste
2 Tbsp Light Soy Sauce
2 tsp Oyster Sauce
1 tsp Minced Garlic
1 Tbsp Mirin Wine
1 Tbsp Hoisin Sauce
Neutral Oil for roasting
Glaze:
2 Tbsp Honey
2 Tbsp Water
Directions
In a large bowl, combine all ingredients in first section EXCEPT chicken thighs and neutral oil. Stir to thoroughly combine.
Add Chicken Thighs and turn to coat evenly. Cover and refrigerate overnight to marinate.
The next day, preheat oven to 410°F, remove chicken from refrigerator and drain, reserving marinade into a small saucepan.
Line a baking sheet with foil or parchment paper. Lightly oil chicken all over with neutral oil. Place chicken in oven and roast to an internal temperature of 165°F. While chicken is roasting, bring marinade to a boil along with Glaze ingredients. Baste Chicken with Glaze and continue roasting to an internal temperature of 180°F. Remove from oven and allow to stand at room temperature for 10 minutes. Slice and serve with Mandarin Pancakes and fresh vegetables of your choice.
