• 1 SMALL YELLOW ONION, DICED
• 16 OZ GROUND TURKEY/CHICKEN
• 1 + ½ CUP ALMOND FLOUR
• ½ C COCONUT FLOUR
• 1 TSP SALT
• ½ TSP BLACK PEPPER
• 2 TSP OREGANO
• 1 TSP GARLIC POWDER
• 2 TSP BAKING POWDER
• 6 EGGS, BEATEN
• 1 CUP CHEDDAR CHEESE
• 1 CUP CHOPPED RED PEPPERS
• 4 OZ MOZZARELLA CHEESE
Directions
1. PREHEAT OVEN TO 400O AND LINE A BAKING SHEET WITH PARCHMENT PAPER.
2. HEAT THE OIL IN A SKILLET OVER MEDIUM HEAT, ADD ONION AND RED PEPPER AND SAUTE FOR MINUTES. ADD IN GROUND MEAT AND BROWN.
3. WHISK TOGETHER THE DRY INGREDIENTS IN A MIXING BOWL, THEN MIX IN THE BEATEN EGGS, CHEDDAR CHEESE, AND MEAT MIXTURE.
4. SPOON OUT INTO 12 EVENLY SIZED BALLS AND PLACE ON PREPARED PAN.
5. PLACE IN THE OVEN FOR 8-10 MINUTES UNTIL FIRM AND BROWING ON THE OUTSIDE, REMOVE FROM OVEN AND PRESS A CRATER INTO THE CENTER OF EACH. ADD A TABLESPOON OF MOZZARELLA TO THE CRATER AND PLACE BACK IN THE OVEN FOR 4-6 MINUTES.
6. REMOVE FROM THE OVEN AND LET COOL COMPLETELY BEFORE STORING IN THE REFRIGERATOR.
