5 yolks
2 ½ tbsp unsalted butter (room temp but NOT melted).
Bread slices
Garlic
Chives
Black pepper
Lemon zest.
Flaky salt.
Directions
Separate the yolks but save the whites for meringue or frittata.
Fill a saucepan with 1/3 water and simmer.
Add the yolks to a bowl and place over the simmering pot of water. Lower heat to med low.
Gently mix with a spoon or spatula, rubbing the sides for about 90 seconds. You want the yolks jammy and slightly thickened. Turn heat off.
Add in butter, mix together until melted.
Salt to taste.
Toast bread, rub garlic on it, spread the yolks and add lemon zest, chives, flaky salt and pepper.
