Oven-baked Caesar Chicken with Creamy Dijon Parmesan Sauce

For the chicken:
4 boneless, skinless chicken breasts
2 tablespoons olive oil
Salt and pepper, to taste
For the creamy Dijon Parmesan sauce:
½ cup mayonnaise
2 teaspoons Dijon mustard
¼ cup grated Parmesan cheese
1 tablespoon lemon juice
1 garlic clove, minced (optional)
Salt and pepper, to taste
Optional garnish:
Chopped fresh parsley
Extra Parmesan
Directions
Preheat the oven:
Set oven to 400°F (200°C). Line a baking dish with parchment paper or lightly grease it.
Prepare the chicken:
Pat chicken breasts dry with a paper towel.
Rub with olive oil, salt, and pepper.
Bake the chicken:
Place chicken in the prepared dish.
Bake for 20–25 minutes, or until internal temperature reaches 165°F (74°C).
Make the sauce:
While the chicken bakes, combine mayonnaise, Dijon mustard, Parmesan, lemon juice, and garlic in a small bowl.
Season with salt and pepper to taste. Mix until smooth.
