Filo Quiche Perfection

Ingredients

300-375g filo pastry

4 Tb melted butter

2 bacon rashers

2 spring onions

80g spinach

6 eggs

250ml cream

Seasonings of choice

1/2 cup grated cheese

Bunch filo into a baking dish and brush liberally with melted butter. Bake at 180 for 10-15 mins or until golden brown. Sauté bacon and onion and wilt down spinach. Mix together eggs, cream and seasoning. Top browned pastry with bacon, onion, spinach and cheese, pour over egg mix and bake for 20-30 mins until cooked through.
