Maple Almond Thumbprints #passover Cookie

Not all #pesach cookies are created equal. But this recipe has THE PERFECT texture combo of being CRISPY on the outside with all the good chewiness on the inside.

Just how I love my cookie! Then you add all the filling of either your favorite jelly, chocolate, streusel or almond butter and you got the ultimate cookie bite.

These are super easy to make and freeze beautifully.

I make them jumbo because I usually serve them with a savior of ice cream for dessert. But make them any size you want

RECIPE:

1 3/4 cup almond flour

1 tsp baking powder

1/4 tsp salt

1/2 tsp cinnamon

1/3 cup maple syrup

1 large egg

1 tsp. Vanilla extract

Directions

Combine the fry ingredients together in a bowl. Then add the wet ingredients. Mix well with spatula till you get a slightly wet and sticky sand like texture.

Then scoop out dollops onto a parchment lined baking sheet.

Make an indent in the middle of the scoop, and then add whatever your filling is.

Bake on 350F for 20 minutes till golden.

Let cool completely and then eat or store.
