Maybe 6 shredded carrots, about 7oz - ish?
about 1 medium diced onion
oil (olive or vegtable)
1 can blackbeans (15.5oz)
1 can corn (15.25oz)
chili powder
cumin
salt and pepper
About 1 cup? unseasoned breadcrumbs
sharp cheddar cheese (cabot)
buns
Marzetti ranch or your favorite hot sauce
Directions
1. in a frying pan with some oil on medium-high heat, fry up carrots and onions until soft and onions translucent. Add generous amounts of chili powder, cumin, salt, and pepper and cook for 1 to 2 minutes more.
2. while the vegetables are frying, rinse the black beans and corn and then put them into a blender with as little water as you can get away with and blend them up.
3. pour the liquid corn and black beans into a big bowl.
4. add the fried carrots and onions to the big bowl.
5. season everything again with more chili powder and cumin generously. Season to taste with salt and pepper.
6. add bread crumbs and mix together. let sit for a few minutes to allow them to absorb moisture and then see how thick the mixture is. Add more bread crumbs as needed until it forms balls easily.
7. form the mixture into balls and press into patties and fry them in a pan with some oil on medium high heat until it's golden brown and crispy on both sides
8. While patties are frying, toast the buns with some cheese
9. Put the fried patties on the buns and add your favorite sauce and enjoy!
