Directions
Put two pounds of cubed beef shank in Le Crueset. Put in a cleaned head of garlic studded throughout pan. Add some sea salt and about .5-.6 ounces of black peppercorns. Add one bottle of good Chianti. This is where we start testing—add 1/2-1 tbs cooked tomato paste and one sprig of rosemary. Cook in a 324 degree (yes, that's right) oven for 4 hours or so until meat is tender and wine is reduced.
