Brown about 2 tbs tomato paste in LC. Then let pan cool a little and put two pounds of cubed beef shank or chuck roast (no need to brown it) in Le Crueset. Put in a cleaned head of garlic studded throughout pan. Add some sea salt to the meat and to the pan when everything is in and about .5-.6 ounces of black peppercorns (3 big handfuls!) and some cracked pepper on the beef. Add one bottle of good Chianti. Add sprigs of fresh rosemary (2 smaller sprigs or 1 large). Cook in a 325 degree oven for 4 hours or so until meat is tender and wine is reduced.
