One-pan Tuscan Garlic Chicken

For the chicken
4 boneless, skinless chicken breasts
2 tbsp olive oil
1 tsp salt
½ tsp black pepper
1 tsp paprika
1 tsp Italian seasoning
For the sauce
3 cloves garlic, minced
1 cup cherry tomatoes
½ cup chicken broth
¼ cup olive oil or pan drippings
1 tsp dried oregano
½ tsp dried basil
Optional: fresh parsley or basil, for garnish
Directions
Season chicken breasts with salt, pepper, paprika, and Italian seasoning.
Heat olive oil in a large skillet over medium-high heat.
Sear chicken 4–5 minutes per side until golden brown. Remove and set aside.
In the same pan, add garlic and cook 30 seconds until fragrant.
Add cherry tomatoes and cook until softened and blistered.
Pour in chicken broth and herbs, scraping up the browned bits.
Return chicken to the pan and simmer 8–10 minutes, until cooked through.
Spoon the sauce over the chicken and garnish with fresh herbs.
