4 Ingredient Sponge Cake

125g/4oz/ 1/2 cup butter or margarine, softened

125g/4oz caster sugar

2 medium free-range eggs

125g/4oz self raising flour

jam, lemon curd or whipped cream and berries, to serve

Directions

Heat the oven to 180C/160C Fan/Gas 4 and line two 18cm/7in cake tins with baking parchment.

Cream the butter and the sugar together until pale. Use an electric hand mixer if you have one. Beat in the eggs.

Sift over the flour and fold in using a large metal spoon.

The mixture should be of a dropping consistency; if it is not, add a little milk.

Divide the mixture between the cake tins and gently spread out with a spatula. Bake for 20-25 minutes, or until an inserted skewer comes out clean. Allow to stand for 5 minutes before turning on to a wire rack to cool.

Sandwich the cakes together with jam, lemon curd or whipped cream and berries or just enjoy on its own.

Result: Fantastic! Tender, airy, moist. The olive oil with brown sugar/vanilla was divine it tasted like summer! It’s also a gorgeous butter yellow colour (see pic).

Recipe: Used old extra virgin olive oil and margarine instead of butter. Used light brown sugar instead of white sugar. Added 1/4 tsp baking powder and 1 tsp vanilla. Added 1 tbsp more flour to get 125g as 1/2 cup flour only weighed 100g (did not weigh butter or sugar).

Method: Microwaved sugar/butter mixture as the margarine became impossibly lumpy due to olive oil. Mixture was dark green with overpowering olive oil smell. Took yolk casings off eggs to avoid eggy smell. Baking powder became lumpy in egg mixture, required heavy stirring. Sprinkled the flour did not sift. Folded in flour w silicone spatula but stirred vigorously since until just combined since there was no air to remove. Baked in one 8 inch pan. Rose well, 1cm on edge and 1 inch in middle. At 20min it looked done (golden) but internal thermometer read 87C not target temp 96C. Hard to use thermometer as the cake is thin and the thermometer falls over and makes big holes. Baked 23-24min (with opening door constantly at the end) to a temp of 95C as it was speckling browning on top. It was perfectly baked with excellent rise from the baking powder!

Next time: Always add baking powder and use thermometer. Try making a bake even cake strip from an old T-shirt and adding. Try 1/2 tsp baking powder (I suspect this would be too much and become bitter). Try scaling recipe 1.5 to fit an 8 inch pan to make a thicker cake like the picture. Try using just olive oil no margarine. I think this texture would be delightful as a loaf or topped with hazelnuts. Text alterations: I added cup measures.
