Creamy Orzo Primavera

Ingredients

1 cup Barilla Orzo

1 small onion, diced

1 large zucchini, sliced

1 cup frozen peas

2 cups vegetable broth

1/2 cup Greek yogurt

Salt and pepper to taste

Parmesan to taste

Basil for garnish

Directions

In a large pot, sauté diced onion and diced zucchini in a bit of olive oil over medium heat until softened, about 5 minutes

Add frozen peas and Orzo to the pot, pour in the vegetable broth, and mix well

Bring the mixture to a simmer, then reduce heat to low; cover the pot and let it cook for about 10-12 minutes, or until most of the liquid has been absorbed

Once the Orzo is cooked, remove the pot from the heat

Stir in Greek yogurt until creamy, then add some freshly grated Parmesan and stir well

Season the dish with salt and pepper to taste, and garnish with fresh basil; serve and enjoy!
