Hearty Pinto Bean, Green Chile & Beef Soup

Ingredients:

1 lb ground beef

1 onion, chopped

2 cloves garlic, minced

2 cans (15 oz each) pinto beans, drained and rinsed

2 cups beef broth

1 can (4 oz) green chilies, diced

1 teaspoon cumin

1 teaspoon chili powder

Salt and pepper to taste

1 tablespoon olive oil

Fresh cilantro for garnish

Directions

In a large pot, heat olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart as it cooks. Add the chopped onion and garlic. Saute for 5 minutes until the onion softens. Stir in the green chilies, cumin, chili powder, salt, and pepper. Add the pinto beans and beef broth, bringing the soup to a simmer. Cook for 20-25 minutes to blend the flavors. Garnish with fresh cilantro and serve hot.
