Vanilla Sheet Cake with Strawberry Frosting

1/2 cup soft unsalted butter

3/4 cup granulated sugar

2 eggs

1 tsp vanilla extract

1/2 cup whole milk

1/2 cup nonfat greek yogurt

1 1/2 cups all purpose flour

1 & 1/2 tsp baking powder

1/4 tsp salt

Strawberry buttercream

1 cup soft unsalted butter

1/2 cup crushed freeze dried strawberries

2 cups powdered sugar

3 tbsp heavy cream

Directions

Start by preheating your oven to 350F

In a small bowl combine your flour, baking powder, baking soda and salt. Mix together and set aside.

In a large bowl cream your butter and sugar for 2 minutes on medium speed. Add in your eggs, vanilla and mix for another 2 minutes. Add in your milk and greek yogurt and mix until smooth.

Add in your dry ingredients and mix until all dry bits are well combined. Place your batter in a lined 9x11 baking dish and bake on 350F for 40-45 minutes

Allow cake to fully cool before icing.

Icing

Start by creaming your butter on medium speed for 2 minutes. Add in your freeze dried strawberries and mix for 1 minute. Add in your powder sugar and heavy cream. Whip on high speed for 3-5 minutes or until light and fluffy.

Top your cooked and cooled cake with frosting.
