1. In a mixing bowl, combine vital wheat gluten, nutritional yeast, smoked paprika, garlic powder, onion powder, black pepper, mustard, and chili flakes. Mix well.
2. In a separate bowl, whisk together soy sauce, olive oil, and vegetable broth.
3. Gradually add the wet ingredients to the dry mixture, stirring until a dough forms.
4. Knead the dough for about 3 minutes until firm. Shape it into a log.
5. Wrap the log tightly in foil, twisting the ends to seal.
6. Steam the wrapped log for 1 hour.
7. Let cool completely before unwrapping and slicing.

Notes
Seitan came out good consistency. Kneaded for 3 minutes exactly. Recipe needs more spices. Next time, double the spices.
