Greek Chicken Salad Bowl

1lb ground chicken

1 can chickpeas

Salt

Pepper

Italian seasoning

1/2 cucumber

1/2 red onion

Handful of grape tomatoes

1/2c feta cheese

3/4c olive oil

1/4c balsamic vinegar

1 tsp Italian seasoning

Rice

Directions

Season chicken with salt, pepper, Italian seasoning. Cook until brown.

Cut and mix cucumber, onion, tomato, feta cheese.

Combine olive oil, balsamic vinegar, Italian seasoning, salt, and pepper. Pour over veggie mix.

Assemble: rice on bottom, chickpeas, chicken. Store in fridge. When ready to eat, reheat and add veggie topping.
