Apple and Cranberry Baked Oats with Cinnamon Yoghurt

Ingredients

4 eggs

1 tbs finely grated orange zest

¼ cup maple syrup

1 tsp ground cinnamon

2 cups of milk of choice (I used oat)

2 cups rolled oats

2 tbs chia seeds

2 tbs LSA

2 apples, diced

1/3 cup @oceansprayanz Craisins, chopped

4 tbs Greek style yoghurt

2 tbs maple syrup

½ tsp ground cinnamon

Directions

Preheat the oven to 180ºC and prepare a 20cm x 15cm baking dish.

Into a bowl or jug, crack the eggs, add the orange zest, maple syrup, cinnamon and milk. Whisk to combine.

Place the oats, chia seeds and LSA into the baking dish. Mix to combine then add in the egg mixture and stir to combine. Sprinkle over the apple and Craisins and gently fold through. Bake for 35-40 minutes, until it springs back when pressed on top and the egg is set.

Make the Cinnamon Yoghurt by placing all ingredients into a small bowl and mix to combine.

Remove from the oven once cooked. Allow to cool slightly. Enjoy warm or cold with a good dollop of Cinnamon Yoghurt.
