Maine Style Lobster Roll

2 tablespoons unsalted butter, at room temperature
1/4 cup mayonnaise, plus more as needed
2 medium stalks celery, finely chopped (about 1/2 cup)
2 tablespoons finely chopped fresh chives (from 1 medium bunch, optional)
1 tablespoon freshly squeezed lemon juice (from 1/2 medium lemon), plus more as needed
1/4 teaspoon kosher salt, plus more as needed
1 pound fresh or thawed frozen cooked Maine lobster meat (about 3 1/2 cups)
Freshly ground black pepper
4 split-top hot dog buns
4 large Bibb lettuce leaves (optional)
Lemon wedges, for serving
Directions
Step 1
Stir 1/4 cup mayonnaise, 2 finely chopped medium celery stalks, 2 tablespoons finely chopped fresh chives, 1 tablespoon lemon juice, and 1/4 teaspoon kosher salt together in a medium bowl.
Step 2
Pat 1 pound fresh or thawed lobster meat with paper towels to thoroughly dry, then cut into bite-size pieces. (You can leave some of the claws whole for presentation if you’d like.) Gently fold the lobster into the dressing. Taste and season with kosher salt, black pepper, and lemon juice as needed. Refrigerate while you toast the buns.
Step 3
Spread the cut sides of 4 split-top hot dog buns with 2 tablespoons room-temperature unsalted butter. Place the buns in a large skillet with one of the butter sides face-down. Cook undisturbed over medium heat until golden-brown, about 3 minutes. Flip the buns to the other buttered side and cook until golden-brown, about 3 minutes more. Transfer to a cutting board and let cool slightly.
Step 4
Spread the buns open slightly. Place 1 large Bibb lettuce leaf in each bun if using. Divide the lobster mixture between the buns. Serve with lemon wedges.
