Cheesy Southwestern Sausage Pasta

400g or 8 sausages, skinless and broken up
1-2tbs Mexican spices- I used @justspices_uk Mexican allrounder.
1 onion, finely diced
3 peppers, finely diced
4 cloves garlic or 4tsp garlic purée
1tbs tomato purée
300g pasta
800ml-1ltr chicken stock
120ml single cream, I used elmlea light
80g cheese, I used a mix of cheddar, Red Leicester and mozzarella.
Chilli flakes and dried parsley to garnish
Directions
Fry off the sausages until browned and then add the seasoning. Add in the onion and peppers and cook until soft, then add in the garlic and tomato puree.
Cook for about 30 seconds and then add in the uncooked pasta and stock. Cook for around 10 minutes or until the pasta is cooked then add in the cream.
Give it a good mix, top with cheese and put it under the grill until golden and bubbling. Garnish. Serve and enjoy.
