Chicken Salad (Mango Coconut)

Ingredients

Chicken:

2 chicken breast, diced

2 tablespoons olive oil

2 teaspoons chili powder

2 tablespoon lime juice

Salad:

2 mangoes, peeled and diced

¼ cup sweetened shredded coconut

⅓ cup macadamia nuts

⅓ cup craisins

1 cup cooked brown rice seasoned with powdered ginger to taste

1 can coconut milk

2 tablespoons coconut sugar or brown sugar

Directions

In a medium saucepan over medium high heat add the oil, cubed chicken, chile powder, and lime juice. Stir until cooked through then cool completely

In a large bowl, combine all ingredients. Toss together well and refrigerate until chilled at least two hours.
