Blueberry Chia Seed Pudding

Ingredients

1,8 dl full fat milk, coconut milk, or another type of plant-based milk

0,6 dl chia seeds

1 tbsp honey (or substitute maple or agave syrup) • ¼ tsp vanilla extract

1,2 dl blueberries

Optional: 0,6 dl gluten-free or grain-free granola for toppings

Directions

1. Combine the milk, honey, vanilla, and blueberries in a blender until pureed. Whisk in the chia seeds (do not blend). Pour 1/2 cup into individual mason jars, ramekins, or cups. Cover and place in the fridge for at least 3 to 5 hours and up to overnight, or until a thick, pudding-like consistency is achieved.

Notes

This pudding is incredibly nourishing for your reproductive system! The base of chia seeds and milk starts you off with a healthy dose of Omega-3 essential fatty acids (truly essential in regulating hormones, increasing blood flow to the uterus, reducing sensitivity to prolactin, normalizing your cycle, and increasing cervical mucus) as well as calcium (great for bone and reproductive health). Blueberries contain phytonutrients loaded with antioxidants and anti-inflammatory properties, which help boost both female and male fertility. They're a good source of fiber and can help balance weight which increases chances of conceiving. Blueberries are also high in folate and vitamin C, which can help with fetal development.

Note: This recipe has to be refrigerated for a few hours, so l recommend making it the night before and keeping it in the fridge overnight. If you do this, it becomes a super fast, easy breakfast the next morning!
