Maple Butter Roast Chicken

1 whole chicken
1-2 limes
1/2 whole garlic clove
1 tsp garlic powder
1 tsp herb seasoning
Salt & black pepper
1 tbsp avocado oil
1 tbsp butter
Glaze:
1/3 cup maple syrup
3 tbsp melted butter
2 tsp brown sugar
2 tsp soy sauce
Juice from 1/2 lime
Vegetables:
Small potatoes or diced
Broccoli
Directions
Preheat oven to 470°F
Pat chicken dry
Stuff chicken with lime wedges + garlic cloves
Mix garlic powder, herb seasoning, salt, pepper, avocado oil, and melted butter. Spread onto chicken.
Place baby (or diced) potatoes, broccoli, and garlic cloves in the bottom of a casserole dish. Drizzle olive oil and salt.
Place the chicken on top.
On the second lowest rack, first bake uncovered for 25-30 minutes.
While chicken is baking, make the glaze. Remove the chicken and coat with half the glaze.
Then bake covered for an additional 25-30 minutes.
Remove from the oven and coat with remaining glaze. Serve hot.
