Steak Cubes with Gorgonzola Cream & Caramelized Pears

Ingredients (Serves 2–3):

For the steak:

1 lb sirloin or ribeye, cut into rustic cubes

1 tbsp olive oil

1 clove garlic, smashed

Salt & black pepper

For the sauce:

1 tbsp butter

½ cup heavy cream

½ cup gorgonzola cheese (or blue cheese), crumbled

1 tsp Dijon mustard

Freshly ground black pepper

For the pears:

1 ripe pear, sliced

1 tbsp butter

1 tsp honey

For garnish:

Toasted walnuts, roughly chopped

Fresh thyme leaves

Directions

Heat a skillet with olive oil and garlic. Sear steak cubes until browned outside and medium-rare inside. Remove and rest.

In another pan, melt butter, add cream, mustard, and gorgonzola. Stir until melted into a creamy sauce.

In a small skillet, sauté pear slices in butter and honey until caramelized and golden.

Return steak to the skillet with sauce, coat lightly. Serve topped with pears, walnuts, and thyme.
