Creamy Lemon Orzo with Salmon

Orzo:
1 tbsp olive oil
1 tbsp butter
1 shallot, finely diced
Salt and black pepper, to taste
1–2 tsp dried thyme (optional)
2 tsp Calabrian chilies or red pepper flakes (to taste)
3-4 cloves garlic, minced (to taste)
1 ½ cups orzo
1/4 cup dry white wine (sav blanc or pinot grigio)
3 cups chicken broth
Zest and juice of 1/2 lemon (or more, to taste)
3/4 cup freshly grated Parmesan (or more, to taste)
1/2 cup cream or half & half (to taste)
1–2 tbsp capers (optional)
Fresh parsley or dill, for garnish
Salmon:
1 lb salmon fillets
1-2 tbsp @eatayoh Dijonayo (or Dijon + mayo, or just Dijon)
Salt and black pepper
Garlic powder
Smoked paprika
Olive oil, for drizzling
Thin lemon slices
