Oatmeal Cake

Ingredients

CAKE:

I

- 1 cup quick oats

- 1 stick butter

- 1 1/4 cups boiling water

- 1 1/3 cups flour

- 1 tsp baking soda

- 1 tsp cinnamon

- 1/4 tsp nutmeg

- 1/2 tsp salt

III

- 2 eggs

- 1 cup white sugar

- 1 cup brown sugar, packed

- 1 tsp vanilla

TOPPING:

- 1 stick butter

- 1/4 cup evaporated milk

- 1 cup brown sugar, packed

- 1 cup sweetened shredded coconut

Directions

I -- pour water over oats and butter (sliced) and let stand until butter is melted (10 minutes)

II -- while waiting, sift ingredients II

III -- beat together all of ingredients III

When I is cooled, add III and mix well. Then add to III. Beat 2 minutes. Baked in greased and floured 9x13 pan for 30 minutes at 350 degrees.

When there are 10 minutes left on cake, mix together topping ingredients in a smaller pan on medium-low.

When cake is finished, spread topping, then place cake in oven with broiler for 90 seconds.
