Raspberry White Chocolate Sugar Cookies

Ingredients

Cakey, buttery cookie with dried raspberries and white chocolate, rolled in white sugar before baking, because why not!

Ingredients for 2 Dozen

1 cup unsalted, softened butter

2 eggs

1 tsp vanilla

1 cup packed brown sugar

1/2 cup white sugar

1 tsp salt

3 cups all purpose flour

1/2 tsp baking soda

1 cup freeze dried raspberries

3 tbsp white sugar for rolling

6 oz white chocolate for melting and dipping

Directions

Start by grabbing ingredients and preheating oven to 350 degrees.

In a mixing bowl combine butter and sugars and mix until smooth.

To the butter and sugars, add eggs, vanilla extract and salt. Combine well.

Combine flour and baking soda in a separate bowl then add to the wet mixture. Combine well.

Finally, fold in the freeze dried raspberries until well distributed.

Scoop out 2 tbsp sized balls of cookie dough and roll in white sugar. Bake for 12 minutes.

Once cooled, dip the cookies in melted white chocolate and place in the fridge to set. Enjoy!!!
