Neck Bone Soup




total time


5 cups chicken stock

2 carrots chopped

2 celery stalks chopped

1 small onion chopped

1 shallot chopped

1 leek sliced

3 cups greens ( cabbage, kale etc)

2 cloves minced garlic

1 tbsp tomato paste

1 cup red wine

1 can cannellini beans

Evoo s&p

1 smoked pork neck bone

French bread


In large pot Sauté veggies in olive oil

Add garlic and tomato paste and cook a bit

Add red wine to deglaze

Add chicken broth and pork neck and greens

Bring to boil reduce to simmer

Simmer an hour

Add beans and heat through

Serve with French bread
