Creamy Sun-dried Tomato Pasta

Ingredients

2 portions of your favourite pasta

290g silken tofu

75g sun-dried tomatoes in oil, plus some of their oil

2 garlic cloves

3 tbsp tomato puree

1/2 tsp smoked paprika

1/2 tsp chili flakes (more if you like it spicy)

3 tbsp nutritional yeast

100ml veg stock

Salt & pepper

Directions

Add your pasta to a pan of salted boiling water and cook as per pack instructions until al dente.

Meanwhile, add all of the ingredients for the sauce to a blender and blend until smooth. Season to taste with more salt and pepper. It turns out quite a light colour but will look more tomato-y when heated.

Drain the pasta, pour the sauce into the pan and mix well. Once heated through and well coated, serve and enjoy! 💛
